Kashmiri Chicken

A popular dish in the northwetern region of India,Kashmir. I hope you will enjoy this dish. Its finger licking good..

Ingredients:

125 g butter















2 large onions, sliced















2 cloves garlic, chopped















1 teaspoon chilli powder
1 teaspoon tumeric powder
salt to taste

750 g chicken pieces ,skinned















125g natural yogurt
















Spices:
1 cinammon halved
1 anistar
10 cadamom
10 peppercorns

Method:

1. Melt the butter in a deep frying pan.
2. Add the spices in the melted butter and fry for 2 minutes.
3. Add the onions and fry with the spices till the onions are golden.



4. Add chilli powder,tumeric powder and salt and fry for 2 minutes,stirring occasionally.

5. Add chicken pieces.


6.Fry the chicken with the onions and spices till brown.
7. Gradually add the yogurt,stirring constantly.
8. Cook gently for about 30 minutes.
9. Garnish with a lemon or lime piece twisted so that the flavour trickels into he gravy.
Serve hot.

CHAR KWAY TEOW (Fried flat rice noodles)

Ingredients

Salt solution :
24 tablespoon tap water
2 teaspoon salt















Noodle:

4 tablespoon vegetable oil for frying
8 garlic cloves pounded
















3 packet flat rice noodles (kway teow)















4 tablespoon dark soya sauce mixed with 5 tablespoon thick sweet sauce and 1 tablespoon oil

4 eggs whisked ,lightly

1 packet chicken sausage chopped 
0.15kg squid
0.30 kg shrimp meat 

2 fish cakes ,sliced


Chilli sauce :

20 pieces of dried chilli , deseeded
340 mL water
1 1/2 tablespoon salt
2 table sugar
1 teaspoon pepper
1 tablesoon chopped garlic

* Blend all the ingredients together
Bring to boil for 5 minutes .
Allow it to cool and store in a plastic container if there is massive remainder. Place in freezer.


Let's Begin COOKING!!!

Method :
  1. Prepare the salt solution by mixing the ingredients in a bowl.
  2. Heat a wok.
  3. Add the oil and fry the garlic till light brown.
4. Add the kway teow (flat rice noodles ) and fry .
5. Add 6-8 table spoon of the salt solution and mix the noodle.
6. Stir in the daark soya sauce and the thick sweet sauce.Stir fry for a minute.

7. Move the noodles to one side of the wok and add the eggs. Scramble the eggs .
8. Mix the eggs with the noodle once scrambled .



9. In a separate frying pan, fry the sausages,prawns,squid and fishcake respectively with 1 tablespoon oil.

10. Add in 8-9 tablespoon of the chilli into the noodles stir well.
11. Add in all the fried ingredients and stir .
12. Serve hot with 1-2 tablespoon chilli sauce.
* Add 310g bean sprouts if you're looking for a more balanced dish.

Home made pepper chicken

This recipe requires 6 hours of marination (Minimum ) for excellent flavour.

Ingredients:
  1. 1 inch ginger (skin removed)
  2. 5 cloves garlic
  3. 1 tablespoon crushed pepper
  4. 1 tablespoon garam masala
  5. 5 pieces dried chilli
  6. 1/2 lemon (juice extreacted and seeds removed)
  7. 9-10 pieces of drumstick and thigh (mix)
  8. 2 table spoon cooking oil































Washing of chicken:

This is a necessary step so as to decrease the chance of salmonella present that can cause health implications when consumed.
















Marination:
1.Upon washing of chicken, make the onion-garkic paste and pour into the chiken and mix well .
2.Add the pepper.

3.Add the chilli.
4.Stir in the lemon juice and mix well. Store in an air tight container for 6 hours in the refrigerator .


Method:
1.Heat the oil till it sizzles.
2. Add the ginger pieces and fry .

3. Fry the dried chill from the marinade with the ginger pieces.

4.Fry the marinated chicken for 20-25 minutes .
5.Add the garam masala and fry .
6.Add salt and mix well and allow to fry for 10 more minutes before serving hot.

  • Upon heating, the protein chains from the muscle began to unfold and denature,causing the myofibrils to fragment and shorten.
  • The juiciness is retained.
  • The pepper serves as the savoury flavour and contributes to the main flavour of the chicken.
  • Spices and herbs like garam masala,dried chilli,ginger and garlic contributed to the aroma and flavour of the chicken.
